Products, variants, images, inventory, customers, full order history, discount codes, blog posts, pages, and SEO titles and descriptions all move as data. The theme, checkout, payment gateway, taxes, and shipping zones are rebuilt on WooCommerce, because Shopify themes and checkout settings do not export. Apps are matched one by one to a WooCommerce extension, a core feature, or custom code.

Shopify URLs have fixed shapes (/products/, /collections/, /blogs/, /pages/); each of yours gets a one-to-one 301 to its WooCommerce address, generated from your export and tested with a crawler before and after cutover.
